Laboratory development direction and research themes

This laboratory is a fermentation process and product development laboratory, focusing on the development and research of microbial processes. It uses strain screening, breeding or mutation technology to develop new functional strains, and conducts innovative structural compounds, special chemicals, Production of fermented food, functional microorganisms, etc. The existing equipment in the laboratory includes 5L fermentation tank, UV/Vis, GC, GCMS, HPLC (with UV/RI/ELSD), multi-functional incubator and microbial operation related equipment. The research directions of this laboratory are as follows:
1. Optimization of microbial fermentation
2. Fermentation program design and process optimization
3. Biotransformation
4. Separation and purification of biochemical process products
5. Fermented food development

The laboratory research and development products and execution plans are as follows:
1. Microbial cells contain different biotransformation enzymes that can carry out specific reactions such as methylation, hydroxyl position conversion, dehydrogenation or glycosylation. Using the biotransformation characteristics of microorganisms, some new drugs can be developed, which not only changes the physical and chemical properties of the compounds, but also improves their biochemical activity. Our laboratory uses microorganisms with special genes or gene transfer methods to conduct biotransformation procedures, and Test the physiological activities and applications of these new drugs to improve their application breadth. At present, the laboratory uses isoflavones, natural triterpenoids and other biologically active substances for biotransformation, changing their physical and chemical properties (such as solubility, acid and alkali resistance...) or strengthening biological activities (anti-inflammatory, antioxidant, Tumor cell inhibition...), developing innovative structural compounds

2. Combining Kinmen's local agricultural specialties and professional microbial fermentation technology, our laboratory developed "Jinzan Sorghum Miso" and "Jinzan Sorghum Bean Curd", using non-genetically modified soybeans, Kinmen local sorghum, wheat and Kinmen sorghum wine is brewed according to ancient methods. This laboratory is committed to strain screening and optimization of fermentation technology, screening out excellent strains with highly active proteolytic enzymes and amylolytic enzymes, and after many experiments, using special technology to insert them into Kinmen's local sorghum and wheat, so that The highly active koji bacteria and soybeans fully carry out the fermentation reaction to produce a variety of amino acids, oligopeptides and oligosaccharides, and a variety of small molecule nutrients, which are not only beneficial to human body absorption, but also mature to produce a mellow and rich flavor.
3. Wine brewing can be divided into liquid fermentation and solid state fermentation. Most of the traditional sorghum wine making processes are based on solid state fermentation. The development and operation control of solid-state fermentation process technology are of great importance to the quality of liquor. It can influence the production of liquor’s special aroma (total esters), taste (acid, residual sugar) and higher alcohols. It occupies a very important position in the development history of Chinese liquor. In order to improve the utilization rate of sorghum starch and alcohol yield, an improved liquid fermentation method (hereinafter referred to as Semi-Solid State Fermentation, SSSF) can be used to ferment sorghum wine. The brewing process takes about 7-10 days. sky. This laboratory is committed to process improvement of solid-state fermentation and semi-solid fermentation, fermentation factor monitoring, and composition analysis over time, in order to improve the yield and concentration of key ingredients.

Resume

        Jiumn-Yih Wu received B.S. and Ph.D. degrees from the Department of Chemical Engineering, National Tsing-Hua University, Hsin-Chu, Taiwan, in 1987 and 1992, respectively. He was an Associate Professor at the Department of Chemical Engineering at I-Shou University from 1996 to 2016. During his service at I-Shou University, he served as the Chairman of the Department of Chemical Engineering during the periods from 2003 to 2006 and from 2014 to 2016. He was invited to be a visiting researcher by the University of Minnesota in 1997 and the Beijing University of Chemical Technology in 2006. In 2016 he was appointed to be the Provost of National Quemoy University (NQU), Kinmen, Taiwan. In 2017 he joined the faculty of the Department of Food Science, NQU, where he is now a Full Professor. He served as the Provost with NQU for 6 years, from 2016 to 2022. His research interests include fermentation technology, functional microbes development, and biotransformation of bioactive molecules. The efforts for years have been devoted to bioprocess engineering which includes fermentation processing, optimized cultivation of microbial organisms, and biotransformation of triterpenoids and Isoflavones to be active pharmaceutical ingredients.
